Gluten allergies or gluten sensitivity (GS) is essentially a collection of medical conditions the basis of which is sensitivity to gluten.

 
However, gluten sensitivity or intolerance is not a food allergy but an auto-immune disorder and eating gluten in your diet does not usually cause you damage - unless you have celiac disease. People may feel that they have general wheat allergies symptoms which may well turn out to be gluten allergies or gluten sensitivity.

Gluten is the protein found in wheat, barley and rye, and consequently is in most of the grain-based products we eat such as cereals, breads, and pasta. When these grains are milled the gluten is released and it is this that gives grain flours their strength and elasticity. This texture is noticeably missing from gluten free breads.

Because gluten is present in so many of our foods, following a gluten-free diet can be quite a challenge. This should of course only be done under advice from your doctor. Usually a doctor or allergist would conduct a gluten allergy test to diagnose the problem of your gluten allergies.  Depending on the severity of the sensitivity to gluten will dictate whether you just need to cut down on the amount  of wheat products you eat or whether you need to eliminate them from your diet altogether.

If you have a high sensitivity to gluten, you may develop celiac disease. Celiac disease is a genetic disorder resulting in sensitivity to gluten from wheat, barley or rye products. If it is not treated, celiac disease will keep the body from absorbing necessary vitamins and minerals, leaving a patient anemic and malnourished.

However, by following a gluten-free diet, patients will experience no symptoms and can lead healthy, normal lives. This is often easier said than done in some cases as patients have find ways to prepare foods without these products. Following this diet will stop symptoms, heal existing intestinal damage, and prevengluten allergies t further damage. Improvement starts within days of starting the diet.

The small intestine usually heals in three to six months in children but may take several years in adults. A healed intestine means that you  now have villi that can absorb nutrients from your food into the bloodstream.
 
Celiac disease was generally believed to be fairly rare in the United States. This was partly because celiac disease has taken an average of eleven years to diagnose and patients who suffer from the disease are often first diagnosed with other conditions such as lactose intolerance and irritable bowel syndrome.

To stay well, people with celiac disease must avoid gluten in their diet for the rest of their lives. Eating even a small amount can damage the small intestine. The damage will occur in anyone with the disease, including people without noticeable symptoms.

Gluten allergies and wheat allergies symptoms are much more common than was first thought and recognition is given to this by the number of gluten-free products now available and and number of gluten-free cookbooks that have been written.
